Stir Fried Beef and Onions |

Stir Fries are a quick and easy way to produce a healthy meal from a few simple ingredients. This recipe uses beef, onions and bean sprouts as the main ingredients, the quantities here will serve 2 handsomely, 3 if another dish is served as well. It is based on an old recipe found in an M & S book, but with added zest. Adjust the amount of chilli and ginger to suit your palate. This dish is very fast to cook, about 20 - 25 minutes for preparation and cooking, and can be left until the last minute. It is not strictly necessary to use a Wok although this is to be preferred if possible, a large deep saucepan or saute pan will do instead. This recipe no garlic so your social life should not suffer afterwards. Serve with plain or fried rice, perhaps with another oriental side dish of vegetables. A dry white or rose wine could accompany this dish, we like an Australian Chardonnay such as Jacob's Creek. |

Method:
Mix the marinade ingredients together in a bowl big enough to take the meat as well. Stir the marinade carefully until it is a smooth, creamy mix with no lumps. Cut the beef as described and add to the marinade, stir to mix. Leave for at least 20 minutes stirring occasionally. Put the oils into a wide pan or wok and heat to almost smoke, add the onions, ginger and chilli. Stir and fry this mixture on high heat for about 3 minutes or until the onion is just showing signs of brown. Add the salt and stir once or twice more. Add the meat and all the marinade. Continue to stir and fry for 3 to 4 minutes, then add the bean shoots. Stir and fry for about one minute more, turn heat to low, cover and cook for one minute longer. Serve immediately. |
